Pumpkin Pie VOO

If you're a regular visitor to my flickr, you'll know that one of my favorite things to do is take crappy cell pics of everything my vegetarian and vegan cooking adventures. One of my ultimate favorite brekkie items and recurring crappy photo crush is VOO or "Vegan Overnight Oats". Really, it's oatmeal I love, but who wants hot oatmeal in the summer time when VOO is pretty nearly the same thing and just as good? I can thank Angela Liddon of Oh She Glows for this obsession. I've made quite a few recipes from her blog, with a mile-high stack of recipes printed out still to try (I think it's the outstanding food photography that does it), but VOO is the one I've really fallen for.

the Chocolate Cherry VOO experiment-- a success!

I've made regular and parfait, the Banana Split (see mine here) and Blueberry Banana Pie. I've even gone so far as to experiment and create my own chocolate cherry VOO, but last night I  decided to make her Pumpkin Pie VOO for an easy Monday morning breakfast.

Move over blueberry banana, there's a new favorite VOO on the block.

Or there will be, after a little tweaking anyway, which is a first for an Oh She Glows recipe. I did end up only using half the maple syrup because I was using vanilla soy instead of almond milk, and nixed the recommended toppings altogether-- raisins and nuts are not my thing. Next time I'll add extra cinnamon and a little brown sugar in addition to the pumpkin spice, because personally the pumpkin spice on its own wasn't pumpkiny enough for me.

It's actually been too cold in the mornings to really merit VOO (we're having an actual fall here in N.VA which I'm enjoying the heck out of) so I'll probably be trying out the  Comforting Pumpkin Pie Oatmeal soon. If it warms up again, and I'm loathefully sure it will, I'll be making another batch of this.

With all the other fall pumpkin recipes I've got lined up on the slab to try, I don't know what'll come next, but one thing I do know...

I'm going to need a bigger can of Pumpkin.

Labor Day Weekend with The Vegan Zombie

Finally! With the arrival of September it's official: the end of summer is nighe. I can think of nothing better to celebrate than the erradication of a season of humidity, mosquitos, and short shorts and hello to the scent of fresh school supplies, the oncoming hues of autumn and the eventual payoff that is Halloween. If ever there was a reason to fire up the grill... and the Vegan Zombie has planned your meal!

Maybe throw a few spicey black bean burgers and some veggie dogs alongside the kabobs. Have a side of John's Baked Beans and potato salad too.

What are you up to this weekend?

The Vegan Zombie

Confession: I am a vegetarian. I have been a vegetarian (on and off, I'll be honest) for about 10 years. I have lapses-- who doesn't from time to time?-- but since last summer I haven't had a shred of meat to eat. Apparently, when you're a bad vegetarian and you decide to go vegan it makes you a WAY better vegetarian. Anywho... last winter while lazily searching online for some new vegan eats and recipes I stumbled on to The Vegan Zombie's blog.
What better reason to go vegan than a horde of flesh eating zombies? I'll leave out the implications and socio-politcal rantings that tie the two together, cause this is about two things that make me happy: cooking* and zombies.

Part cooking show, part zombie adventure with a good dose of humour. Whether or not the actual movie gets released in any form (they've already missed their 2011 deadline) watching Jon make good grub on their youtube stream's enough for me-- and Jon himself is pretty scrumptious on his own, let's be honest. Did I mention his autumn themed tattoo sleeve? The way he talks to his dog, Indy? Erradicates the zombie hordes? It's enough to make any girl swoon...
Still, if you're vegan, vegetarian, or an all out "we have canines for a reason" card-carrying meat-asauruous like my Dad, good food is good food and zombie fun is... well zombie fun.

The Vegan Zombie's sure to be popping here from time to time. If for nothing else to serve as a reminder of recipes I want to try. There's so many! As it is I've only managed the breakfast burrito and the shepherds pie.

I've adopted the mashed potatoes portion of that recipe as my end all be all mashed pots recipe. It's THAT good.

*cooking and NOT eating. Eating's kind of a pain in the ass-- an afterthought of instinctual survival really-- but cooking at least helps you not only get excited to eat, but works up an appetite to actually do it. Kinda like killing Zombies...
